You will need:
– 2 avocados diced
– 1.5 cups of cherry tomatoes, halved
– 1/2 cup chopped cilantro
– 1 lime, squeeze juice
– 1 can black beans, drained and rinsed
– 1 1/4 cup corn
– 1 red pepper, diced
– 1 cucumber
– salt and pepper to taste!
Just mix it all together and that’s it! We like to mix up some of these organic veggies and whip up some great salads on the fly.
NOTE: I squeeze the lime juice directly onto the diced avocados so that if by chance there’s leftovers, it’ll keep them from browning overnight.
