Easy (one pan) Mexican Skillet: Jalapeño Huevos

Jalapeno Huevos

Ingredients

  • 2 cups of Bell Peppers, diced
  • Half of an Onion, diced
  • 1/2 cup of canned Jalapenos
  • 7+ Whole Eggs
  • 1 Cup of Mozzarella Cheese
  • 1 Cup of Mexican Cheese (Queso Fresco)
  • Garlic Salt (or half a clove,crushed)
  • 2 tablespoons of Olive Oil
  • Tapatio (optional)

Serves 2-4 people

Instructions

    1. Dice onion, bell peppers, jalapenos
    2. Place veggies into a skillet with olive oil and garlic salt (or cloves)
    3. Cook until onion starts to brown
    4. Add all 7+ whole eggs
    5. Bake at 450*degrees and cook for 7 minutes
    6. Remove from Oven, Sprinkle Mozzarella cheese
    7. Broil on High for 3 minutes
    8. Remove from Over and Sprinkle Mexican Queso Fresco Cheese
    9. Garnish with Jalapeno

This is one of my favorite go-to recipes when I’m short on veggies and still want a high protein and low carb meal. It’s super easy and you can make this with one pan!
