Watermelon Popsicles (Mexican Paletas con Tajin)

In Southern California, we have officially hit 95 degrees! The days are getting warm, the sun is staying out longer, which means watermelon ­čŹë┬átime. My family loves to enjoy a cold fresh watermelon on hot summer days. I wanted to recreate a healthy option for popsicles. You can give it a yummy fiesta twist with some Tajin and lemon juice!┬á

Let me start by saying, the kitchen isn’t my best friend. Especially during the summer, we don’t have central air conditioning┬á­čśú┬áTherefore, I try my absolute best to not cook on the stove top as frequently. Which means no baking, but we can enjoy these yummy snacks.

 

Lately, I’ve been venturing into making healthier options that don’t require adding extra sugar ingredients. This is a fun recipe that your kids can help with! They’ll love it and so will your wallet.

Watermelon Popsicles /
Paletas con Tajin

Ingredients

  • 1/2 of a Large Watermelon cut
  • 1 Lemon, Squeezed
  • 2 cups water

Takes 10,
serves 24-30 Small Popsicles

Instructions

  1. Cut Half of your Large Watermelon
  2. Freeze
  3. Add Frozen Watermelon pieces to Blender
  4. Add 3 Cups of Water into Blender
  5. Add 1 Freshly Squeezed Lemon (juice) into Blender
  6. Blend
  7. Pour into Popsicle mold
  8. Add Pineapple Chunks (optional)
  9. Add Tajin before you pour in your Watermelon mix (optional)
  10. Freeze for 3-4 hours

We added pineapple chunks, lemon juice and Tajin to a few popsicles in our molds. Amazon.com has a nice variety of reusable popsicle molds.

 

You can also create these cute little popsicles with dixie cups and wooden popsicle sticks. If you freeze the fruit before blending, it will give you a thick mixture and the sticks won’t fall over, they’ll sit in place as they freeze.
