Jalapeno Huevos
Ingredients
- 2 cups of Bell Peppers, diced
- Half of an Onion, diced
- 1/2 cup of canned Jalapenos
- 7+ Whole Eggs
- 1 Cup of Mozzarella Cheese
- 1 Cup of Mexican Cheese (Queso Fresco)
- Garlic Salt (or half a clove,crushed)
- 2 tablespoons of Olive Oil
- Tapatio (optional)

Serves 2-4 people
Instructions

- Dice onion, bell peppers, jalapenos
- Place veggies into a skillet with olive oil and garlic salt (or cloves)
- Cook until onion starts to brown
- Add all 7+ whole eggs
- Bake at 450*degrees and cook for 7 minutes
- Remove from Oven, Sprinkle Mozzarella cheese
- Broil on High for 3 minutes
- Remove from Over and Sprinkle Mexican Queso Fresco Cheese
- Garnish with Jalapeno
This is one of my favorite go-to recipes when I’m short on veggies and still want a high protein and low carb meal. It’s super easy and you can make this with one pan!
